- 0.5 cup Key lime juice
- 1 tablespoon Key lime zest
- 2 count Large eggs
- 1 teaspoon Vanilla extract
- 1 cup Whipped cream(optional)
Instructions
- 1
Preheat your oven to 325°F (165°C) and line an 8x8 inch baking pan with parchment paper.
- 2
Mix the graham cracker crumbs, sugar, and melted butter in a bowl until the mixture resembles wet sand.
- 3
Press the crumb mixture firmly into the bottom of the prepared pan and bake for 10 minutes, then let cool slightly.
- 4
In a large bowl, beat the softened cream cheese until smooth and creamy using an electric mixer.
- 5
Gradually beat in the sweetened condensed milk, lime juice, lime zest, and vanilla extract until well combined.
- 6
Add the eggs one at a time, mixing on low speed just until incorporated to avoid adding too much air.
- 7
Pour the cheesecake filling over the baked crust and smooth the top with a spatula.
- 8
Bake for 30-35 minutes until the edges are set but the center still has a slight jiggle, then chill for at least 4 hours before slicing.
