Ingredients
- 3 cups Cooked Sona Masuri Rice
- 2 tablespoons Tamarind Paste
- 1 1/2 tablespoons Jaggery powder
- 2 tablespoons Gojju Pudi (Spice Powder)
- 1/4 cup Peanuts
- 3 tablespoons Sesame Oil
- 1 teaspoon Mustard Seeds
- 1 teaspoon Urad Dal
- 1 teaspoon Chana Dal
- 10 leaves Curry Leaves
- 2 pieces Dried Red Chillies
- 1 teaspoon Salt

Spread the cooked rice on a large plate to cool down completely, ensuring the grains are separate.

Heat 1 tablespoon of oil in a pan and roast the peanuts until crunchy, then set them aside.

In the same pan, add the remaining oil and temper with mustard seeds, urad dal, chana dal, red chillies, and curry leaves.

Add the tamarind paste diluted with half a cup of water, jaggery, and salt to the pan.

Simmer the mixture until it thickens slightly, then stir in the Gojju Pudi (spice powder).

Continue cooking until the oil starts to separate from the spice paste (the Gojju).

Add the cooled rice and roasted peanuts to the pan, mixing gently to coat every grain without mashing the rice.

Cover and let it rest for 10 minutes before serving to allow the flavors to absorb.
