Dosa batter base topped with a layer of hummus and Mediterranean style masala potatoes.

Heat one tablespoon of olive oil in a pan and add the cubed potatoes, cumin, paprika, and salt.
Sauté the potatoes until they are golden and slightly crispy, then set aside as your Mediterranean masala base.
Heat a non-stick griddle or tawa over medium heat and lightly grease with a drop of oil.
Pour a ladleful of dosa batter onto the center and spread it into a thick pancake (uttapam style) rather than a thin crepe.
While the batter is still wet on top, spread a thin, even layer of hummus over the surface.
Sprinkle the roasted peppers and the prepared masala potatoes over the hummus layer, pressing them down gently with a spatula.
Drizzle a little olive oil around the edges and cook for 2-3 minutes until the bottom is golden brown and the top is set.
Garnish with Za'atar and fresh parsley before sliding it off the pan to serve hot.
