  • 3 large Ripe Plantains
  • 4 tablespoons Honey
  • 2 cups Vegetable Oil
  • 2 medium Red Bell Pepper (blended)
  • 1 small Scotch Bonnet Pepper
  • 1 large Onion
  • 1 tablespoon Tomato Paste
  • 1 tablespoon Ginger-Garlic Paste
  • 2 pieces Seasoning Cubes
  • 1 teaspoon Salt
  • 1/2 cup Green Bell Pepper (diced)(optional)

Instructions

    Clean the chicken gizzards thoroughly and boil with half an onion, ginger-garlic paste, and one seasoning cube until tender.

    Peel the plantains and dice them into small cubes, then deep fry in vegetable oil until golden brown and set aside.

    Drain the cooked gizzards and deep fry them briefly in the same oil until they have a slightly crunchy exterior.

    In a separate pan, heat 3 tablespoons of oil and sauté the remaining chopped onions until translucent.

    Add the blended peppers and tomato paste, frying for 10-12 minutes until the water evaporates and the oil separates.

    Stir in the honey, remaining seasoning cube, and salt, allowing the sauce to caramelize slightly for 2 minutes.

    Add the fried gizzards and plantains into the honey-pepper sauce, tossing thoroughly to ensure every piece is glazed.
