Ingredients

Servings:4
  • 1 1/2 lbs boneless skinless chicken breast, cubed
  • 1/3 cup honey
  • 1/4 cup low-sodium soy sauce
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 2 cups broccoli florets
  • 1 large red bell pepper, sliced
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 teaspoon sesame seeds(optional)
  • 2 stalks green onions, sliced(optional)

Instructions

  1. 1

In a small bowl, whisk together the honey, soy sauce, minced garlic, and grated ginger to create the sauce.

  2. 2

In a separate tiny bowl, mix the cornstarch with one tablespoon of water to create a slurry and set aside.

  3. 3

Heat one tablespoon of oil in a large skillet or wok over medium-high heat.

  4. 4

Add the chicken cubes to the skillet and cook until browned and cooked through, about 5-7 minutes; remove chicken and set aside.

  5. 5

Add the remaining tablespoon of oil to the same skillet and stir fry the broccoli and bell peppers for 3-4 minutes until tender-crisp.

  6. 6

Return the chicken to the skillet and pour the honey garlic sauce over the mixture.

  7. 7

Stir in the cornstarch slurry and simmer for 1-2 minutes until the sauce thickens and coats everything evenly.

  8. 8

Garnish with sesame seeds and green onions before serving over steamed rice.
