Ingredients
- 6 large Fresh peaches, halved and pitted
- 1/2 cup Unsalted butter, melted
- 1/3 cup Wildflower honey
- 1/4 cup Brown sugar
- 1 teaspoon Ground cinnamon
- 1 tablespoon Lemon juice
- 1 1/2 cups All-purpose flour
- 2 teaspoons Baking powder
- 1/2 cup Cold unsalted butter, cubed
- 3/4 cup Heavy cream
- 1 teaspoon Vanilla extract
- 1 tablespoon Coarse sanding sugar(optional)
Instructions
- 1
Preheat your grill to medium-high heat (about 400°F) and lightly oil the grates.
- 2
Whisk together the melted butter, honey, and lemon juice in a small bowl to create the basting glaze.
- 3
Place peach halves cut-side down on the grill for 3-4 minutes until charred grill marks appear, then flip and brush generously with the honey glaze.
- 4
Remove peaches from the grill, slice them into thick wedges, and toss in a cast-iron skillet with brown sugar and cinnamon.
- 5
In a separate bowl, cut the cold cubed butter into the flour and baking powder using a pastry cutter until the mixture resembles coarse crumbs.
- 6
Stir in the heavy cream and vanilla extract until a soft dough forms, being careful not to overwork it.
- 7
Drop spoonfuls of the dough over the grilled peaches and brush the top of the crust with any remaining honey-butter glaze.
- 8
Place the skillet on the indirect heat side of the grill (or in a 375°F oven) and bake for 25-30 minutes until the pastry is golden brown and the fruit is bubbling.
