  • 1 1/2 lbs Chicken breast, cubed
  • 2 tbsp Taco seasoning
  • 3 cups Cooked white rice
  • 1/4 cup Fresh cilantro, chopped
  • 2 tbsp Lime juice
  • 15 oz can Black beans, drained and rinsed
  • 1 cup Corn kernels
  • 1 large Avocado, sliced
  • 1/2 cup Shredded cheddar cheese
  • 1/2 cup Salsa or Pico de Gallo
  • 1 tbsp Olive oil
  • 4 tbsp Sour cream(optional)

Instructions

    In a large bowl, toss the cubed chicken with taco seasoning until evenly coated.

    Heat olive oil in a large skillet over medium-high heat and cook chicken for 8-10 minutes until golden brown and cooked through.

    In a separate bowl, mix the warm cooked rice with chopped cilantro and lime juice.

    Warm the black beans and corn in a small saucepan or microwave until heated through.

    Divide the cilantro-lime rice evenly among four serving bowls.

    Top each bowl with a portion of the cooked chicken, black beans, and corn.

    Add the sliced avocado, shredded cheese, and a dollop of salsa to each bowl.
