Halloumi and Avocado Tacos

Ingredients
- 250 g Halloumi cheese
- 1 large Ripe avocado
- 6 pieces Small corn or flour tortillas
- 1 cup Red cabbage, shredded
- 0.25 cup Sour cream or Greek yogurt
- 1 tablespoon Lime juice
- 2 tablespoons Fresh cilantro, chopped(optional)
- 1 tablespoon Olive oil
- 0.5 teaspoon Smoked paprika

Slice the halloumi into 1cm thick strips and pat dry with a paper towel.

In a small bowl, whisk together the sour cream, lime juice, and a pinch of salt to create the lime crema.

Heat olive oil in a non-stick skillet over medium-high heat. Add halloumi slices and sprinkle with smoked paprika. Fry for 2-3 minutes per side until golden brown and crispy.

While the cheese cooks, pit and slice the avocado.

Warm the tortillas in a dry pan or microwave for 30 seconds.

Assemble the tacos by placing shredded cabbage on each tortilla, followed by two strips of fried halloumi and avocado slices.

Drizzle with lime crema and garnish with fresh cilantro before serving.
