Grilled Cod with Roasted Cherry Tomatoes

Ingredients
- 4 6-ounce portions Cod fillets
- 2 cups Cherry tomatoes
- 3 tablespoons Extra virgin olive oil
- 3 cloves Garlic cloves, minced
- 1/2 cup Fresh basil leaves, torn
- 1 teaspoon Dried oregano
- 1 tablespoon Lemon juice
- 1 teaspoon Sea salt
- 1/2 teaspoon Black pepper
- 4 wedges Lemon wedges(optional)

Preheat your grill to medium-high heat and lightly oil the grates to prevent sticking.

In a small bowl, whisk together the olive oil, minced garlic, dried oregano, lemon juice, salt, and pepper.

Pat the cod fillets dry with paper towels and brush both sides generously with the prepared herb oil.

Toss the cherry tomatoes in a small bowl with a drizzle of olive oil and a pinch of salt.

Place the cod fillets on the grill and cook for 4 to 5 minutes per side until the fish is opaque and flakes easily.

While the fish is cooking, place the cherry tomatoes in a grill basket or on a piece of foil next to the fish.

Grill the tomatoes for 5-6 minutes until they begin to blister and burst.

Remove everything from the grill, top the fish with the roasted tomatoes and fresh basil, and serve with lemon wedges.
