Ingredients

  • 3 cups Cooked chicken breast, shredded or cubed
  • 0.5 cup Plain non-fat Greek yogurt
  • 0.5 cup Celery, diced
  • 0.5 cup Red grapes, halved
  • 2 tablespoons Red onion, finely minced
  • 1 tablespoon Lemon juice
  • 1 teaspoon Dijon mustard(optional)
  • to taste Salt and black pepper
  • 1 tablespoon Fresh parsley, chopped(optional)

Instructions

    In a large mixing bowl, whisk together the Greek yogurt, lemon juice, and Dijon mustard until smooth.

    Add the cooked chicken, diced celery, halved grapes, and minced red onion to the bowl.

    Fold the ingredients together until the chicken is evenly coated with the yogurt dressing.

    Season with salt and black pepper to taste.

    Stir in fresh parsley if using.

    Serve immediately or chill in the refrigerator for 30 minutes to allow flavors to meld. Serve on bread, in a wrap, or over a bed of greens.
