Greek Salad with Grilled Chicken

Ingredients

  • 2 pieces Chicken breast
  • 1 large Cucumber
  • 1 cup Cherry tomatoes
  • 0.25 cup Red onion
  • 0.5 cup Kalamata olives
  • 0.5 cup Feta cheese
  • 4 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Dried oregano
  • 2 cups Romaine lettuce(optional)

Instructions

    Whisk 2 tablespoons of olive oil, 1 tablespoon of lemon juice, half the oregano, salt, and pepper in a bowl. Marinate chicken for 10 minutes.

    Grill the chicken over medium-high heat for 5-6 minutes per side until the internal temperature reaches 165°F (74°C). Let rest for 5 minutes before slicing.

    In a large bowl, combine chopped cucumber, halved cherry tomatoes, thinly sliced red onion, and olives.

    Prepare the dressing by whisking the remaining olive oil, lemon juice, and oregano.

    Toss the vegetables with the dressing and top with crumbled feta cheese.

    Slice the grilled chicken and place it on top of the salad. Serve immediately.
