Greek Salad with Grilled Shrimp

Ingredients

  • 1/2 lb Large shrimp, peeled and deveined
  • 1 large Cucumber, chopped
  • 1 cup Cherry tomatoes, halved
  • 1/4 cup Red onion, thinly sliced
  • 1/4 cup Kalamata olives, pitted
  • 1/4 cup Feta cheese, crumbled
  • 3 tbsp Extra virgin olive oil
  • 2 tbsp Lemon juice
  • 1 tsp Dried oregano
  • to taste Salt and black pepper

Instructions

    In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper to create the dressing.

    Toss the shrimp with 1 tablespoon of the dressing and let marinate for 5 minutes.

    Preheat a grill pan or outdoor grill over medium-high heat. Grill the shrimp for 2-3 minutes per side until pink and opaque.

    In a large bowl, combine the cucumber, cherry tomatoes, red onion, and olives.

    Pour the remaining dressing over the vegetables and toss gently to coat.

    Divide the salad onto two plates, top with the grilled shrimp and crumbled feta cheese.
