Ingredients
- 1/2 lb Large shrimp, peeled and deveined
- 1 large Cucumber, chopped
- 1 cup Cherry tomatoes, halved
- 1/4 cup Red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted
- 1/4 cup Feta cheese, crumbled
- 3 tbsp Extra virgin olive oil
- 2 tbsp Lemon juice
- 1 tsp Dried oregano

In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper to create the dressing.

Toss the shrimp with 1 tablespoon of the dressing and let marinate for 5 minutes.

Preheat a grill pan or outdoor grill over medium-high heat. Grill the shrimp for 2-3 minutes per side until pink and opaque.

In a large bowl, combine the cucumber, cherry tomatoes, red onion, and olives.
