General Tso's Chicken

Ingredients
- 1.5 lbs Chicken thighs, boneless and skinless
- 0.5 cup Cornstarch
- 1 Egg, beaten
- 3 tbsp Soy sauce
- 2 tbsp Rice vinegar
- 3 tbsp Sugar
- 1 tbsp Hoisin sauce
- 0.25 cup Chicken broth
- 6 Dried red chilies(optional)
- 1 tbsp Fresh ginger, minced
- 2 cloves Garlic, minced
- 1 cup Vegetable oil

Cut chicken into 1-inch bite-sized pieces.

In a bowl, toss chicken with the beaten egg, then coat thoroughly with cornstarch until no damp spots remain.

In a small bowl, whisk together soy sauce, rice vinegar, sugar, hoisin sauce, chicken broth, and 1 teaspoon of cornstarch to make the sauce.

Heat oil in a large skillet or wok over medium-high heat. Fry chicken in batches until golden brown and crispy (about 3-5 minutes per batch). Remove and drain on paper towels.

Drain all but 1 tablespoon of oil from the pan. Add garlic, ginger, and dried chilies; sauté for 30 seconds until fragrant.

Pour the sauce mixture into the pan and stir until it thickens into a glossy glaze.

Add the fried chicken back into the pan and toss quickly to coat every piece with the sauce.
