  • 2 pounds Bone-in, skin-on chicken thighs
  • 3 tablespoons Olive oil
  • 4 cloves Garlic cloves, minced
  • 1 tablespoon Fresh rosemary, chopped
  • 1 tablespoon Fresh thyme, chopped
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Smoked paprika
  • 1 teaspoon Kosher salt
  • 0.5 teaspoon Black pepper
  • 4 pieces Lemon wedges(optional)

    Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or foil.

    Pat the chicken thighs completely dry with paper towels to ensure the skin gets extra crispy.

    In a small bowl, whisk together the olive oil, minced garlic, rosemary, thyme, oregano, paprika, salt, and pepper.

    Place the chicken thighs in a large bowl and pour the herb mixture over them, tossing to coat thoroughly.

    Arrange the chicken thighs on the prepared baking sheet, skin-side up, ensuring they are not touching.

    Roast in the oven for 30 to 35 minutes, or until the internal temperature reaches 165°F (74°C).
