Ingredients
- 2 lbs Beef chuck, cubed
- 1 cup Smooth peanut butter (natural)
- 3 tbsp Tomato paste
- 1 large Yellow onion, finely chopped
- 2 medium Sweet potatoes, peeled and cubed
- 6 cups Beef broth or water
- 2 tbsp Lemon juice
- 3 tbsp Vegetable oil
- 1 piece Scotch bonnet pepper (whole)(optional)
- 3 cloves Garlic, minced
Instructions
- 1
Heat the vegetable oil in a large heavy-bottomed pot over medium-high heat and sear the beef cubes until browned on all sides.
- 2
Add the chopped onions and garlic to the pot, sautéing until the onions become translucent and soft.
- 3
Stir in the tomato paste and cook for 2 minutes to caramelize it slightly, then pour in the beef broth or water.
- 4
Bring the liquid to a boil, then reduce heat to low and simmer for about 40 minutes until the beef begins to tenderize.
- 5
In a separate bowl, whisk the peanut butter with a cup of the hot cooking liquid until smooth, then stir this mixture back into the main pot.
- 6
Add the sweet potato cubes and the whole scotch bonnet pepper, ensuring the pepper does not burst if you prefer less heat.
- 7
Simmer the stew for another 20-30 minutes, stirring frequently to prevent the peanut sauce from burning at the bottom, until the sauce is thick and potatoes are soft.
- 8
Stir in the lemon juice for the signature tang, adjust salt to taste, and serve hot over white rice.
