Ingredients
- 2 cups Day-old cooked white rice
- 1/2 can Spam, cubed
- 1 cup Kimchi, chopped
- 2 tablespoons Kimchi juice
- 1 tablespoon Gochujang (Korean chili paste)
- 1 teaspoon Soy sauce
- 1 tablespoon Toasted sesame oil
- 1 tablespoon Vegetable oil
- 2 stalks Green onions, sliced
- 2 large Eggs
- 1 teaspoon Toasted sesame seeds(optional)
- 1 pinch Roasted seaweed (Gim) strips(optional)
Instructions

Heat vegetable oil in a large non-stick skillet or wok over medium-high heat.

Add the cubed Spam and fry until the edges are golden brown and crispy.

Stir in the chopped kimchi and cook for 2-3 minutes until it softens and smells fragrant.

Add the cold day-old rice, breaking up any large clumps with a spatula.

Pour in the kimchi juice, gochujang, and soy sauce, tossing everything together until the rice is evenly coated and red.

Drizzle with sesame oil and toss in half of the green onions, then remove the pan from heat.

In a separate small pan, fry the eggs sunny-side up or to your preferred doneness.

Divide the rice into bowls, top each with a fried egg, remaining green onions, sesame seeds, and seaweed strips.
