Durban Chicken Bunny Chow

Ingredients
- 2 half-loaves Loaves of white bread (unsliced)
- 800 grams Chicken breast or thighs, cubed
- 3 tablespoons Vegetable oil
- 1 large Onion, finely chopped
- 3 tablespoons Durban masala or strong curry powder
- 1 piece Cinnamon stick
- 1 piece Star anise
- 2 tablespoons Ginger-garlic paste
- 1 can Chopped tomatoes
- 2 medium Potatoes, peeled and cubed
- 8 leaves Curry leaves
- 1 handful Fresh cilantro (coriander) for garnish(optional)

Heat oil in a large pot over medium heat and sauté the onions, cinnamon stick, and star anise until the onions are translucent.

Add the ginger-garlic paste and curry leaves, stirring for one minute until fragrant.

Stir in the Durban masala curry powder, being careful not to burn the spices.

Add the cubed chicken and cook until browned on all sides.

Pour in the chopped tomatoes and cubed potatoes, then add enough water to just cover the ingredients.

Simmer on low heat for 25-30 minutes until the chicken is tender and the potatoes are soft enough to thicken the gravy.

Cut the bread loaves in half and hollow out the center (the 'virgin'), keeping the bread centers for dipping.

Ladle the hot chicken curry into the bread hollows, garnish with cilantro, and serve immediately.
