Ingredients
- 200 g Dried Soba Noodles
- 1/2 cup Tsuyu (Noodle Dipping Sauce)
- 1 cup Water
- 1 stalk Green Onion
- 1 tsp Wasabi Paste(optional)
- 1 pinch Shredded Nori (Seaweed)(optional)
- 1/2 tsp Grated Ginger(optional)
Instructions

Bring a large pot of water to a boil. Do not add salt.

Add the soba noodles and cook according to package instructions (usually 4-5 minutes). Stir occasionally to prevent sticking.

Drain the noodles in a colander and immediately rinse under cold running water. Rub the noodles gently with your hands to remove excess starch.

Transfer the noodles to a bowl of ice water to chill completely, then drain well.

Dilute the tsuyu concentrate with water according to the package ratio (typically 1:2 or 1:3) and divide into two small dipping bowls.

Finely slice the green onions and prepare the wasabi and ginger.

Place the chilled noodles on a zaru (bamboo tray) or a plate. Top with shredded nori.

Serve the noodles with the dipping sauce and condiments on the side.
