  • 1 1/2 lbs Boneless skinless chicken breasts
  • 3 large Bell peppers (mixed colors)
  • 1 large Yellow onion
  • 3 tablespoons Olive oil
  • 2 tablespoons Lime juice
  • 1 tablespoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Garlic powder
  • 1/2 teaspoon Smoked paprika
  • 8 pieces Flour tortillas
  • 1/4 cup Fresh cilantro(optional)
  • 1/2 cup Sour cream(optional)

Instructions

    In a small bowl, whisk together 2 tablespoons of olive oil, lime juice, chili powder, cumin, garlic powder, and paprika.

    Slice the chicken breasts into thin strips and place them in a bowl; pour the marinade over the chicken and let sit for at least 15 minutes.

    While the chicken marinates, slice the bell peppers and onion into thin strips of similar size.

    Heat a large cast-iron skillet over high heat until it is smoking slightly.

    Add the remaining tablespoon of oil, then add the chicken strips in a single layer, cooking until browned and cooked through (about 5-6 minutes).

    Remove chicken from the skillet and set aside; immediately add the peppers and onions to the hot pan.

    Sauté the vegetables for 3-4 minutes until they are crisp-tender and have charred edges.

    Return the chicken to the skillet, toss everything together for 1 minute to reheat, and serve immediately on warm tortillas.
