- 1 pound Raw large shrimp, peeled and deveined
- 3/4 cup Fresh lime juice
- 1/4 cup Fresh lemon juice
- 2 whole Roma tomatoes, diced
- 1/2 cup Red onion, finely diced
- 1 cup Cucumber, peeled and diced
- 1 whole Jalapeño, seeded and minced
- 1/2 cup Fresh cilantro, chopped
- 1 whole Avocado, diced
- 2 tablespoons Extra virgin olive oil(optional)
- 1 teaspoon Salt and black pepper

Cut the raw shrimp into 1/2-inch bite-sized pieces and place them in a large glass or ceramic bowl.

Pour the lime and lemon juices over the shrimp, ensuring they are completely submerged.

Cover and refrigerate for about 30 minutes, or until the shrimp turn opaque and pink (the acid 'cooks' the protein).

While the shrimp marinates, dice the tomatoes, onion, cucumber, and jalapeño.

Once the shrimp is ready, drain about half of the excess citrus juice from the bowl if you prefer it less acidic.

Stir in the diced tomatoes, red onion, cucumber, jalapeño, and cilantro.

Gently fold in the diced avocado and olive oil to avoid mashing the avocado.
