  • 1 cup Semolina (Rava/Sooji)
  • 1 1/2 cups Sugar
  • 1/2 cup Ghee (Clarified Butter)
  • 2 1/2 cups Water
  • 10 pieces Cashew nuts
  • 1 tablespoon Raisins
  • 1/2 teaspoon Cardamom powder
  • 1 pinch Saffron strands(optional)
  • 1 pinch Orange food color(optional)
  • 1 pinch Salt

Instructions

    Heat 2 tablespoons of ghee in a pan and roast the cashews and raisins until golden brown, then set aside.

    In the same pan, add the rava and roast on low flame for 3-5 minutes until fragrant but not browned.

    In a separate pot, bring 2.5 cups of water to a rolling boil.

    Slowly pour the boiling water into the roasted rava while stirring constantly to prevent lumps.

    Cover and cook on low heat for 2 minutes until the water is fully absorbed and the rava is soft.

    Add the sugar and a pinch of salt; the mixture will loosen and become liquid again.

    Add the remaining ghee, cardamom powder, saffron, and food color, stirring until the mixture thickens and leaves the sides of the pan.

    Garnish with the roasted cashews and raisins, mix well, and serve warm.
