Classic Peruvian Lomo Saltado

Ingredients
- 1 1/2 lbs Beef Sirloin (cut into strips)
- 1 large Red Onion (sliced into thick wedges)
- 3 medium Plum Tomatoes (sliced into thick wedges)
- 1 tablespoon Aji Amarillo paste
- 3 tablespoons Soy Sauce
- 2 tablespoons Red Wine Vinegar
- 2 cups French Fries (cooked and crispy)
- 1/4 cup Fresh Cilantro (chopped)
- 3 cloves Garlic (minced)
- 2 tablespoons Vegetable Oil
- to taste none Salt and Black Pepper
Instructions

Season the beef strips generously with salt and pepper.

Heat a wok or large skillet over high heat with one tablespoon of oil until smoking.

Sear the beef in small batches until browned and medium-rare, then remove and set aside.

In the same pan, add the remaining oil and sauté the onions for 2 minutes until slightly softened but still crunchy.

Add the garlic and aji amarillo paste, stirring for 30 seconds until fragrant.

Add the tomatoes, soy sauce, and vinegar; toss for 1 minute until the tomatoes just begin to soften.

Return the beef and its juices to the pan, tossing everything together for 30 seconds.

Gently fold in the crispy french fries and chopped cilantro, then serve immediately over white rice.
