  • 2 lbs Yukon Gold potatoes, peeled and cubed
  • 2 cups Olive oil for frying
  • 1/2 cup Onion, finely chopped
  • 3 cloves Garlic cloves, minced
  • 1 1/2 tbsp Smoked paprika (Pimentón)
  • 1/4 tsp Cayenne pepper
  • 1 tbsp Tomato paste
  • 1 cup Canned crushed tomatoes
  • 1/2 tsp Sugar
  • 1 tsp Salt and black pepper
  • 1/4 cup Mayonnaise (for aioli topping)(optional)
  • 1 tbsp Fresh parsley, chopped(optional)

Instructions

    Peel the potatoes and cut them into 1-inch bite-sized cubes, then pat them completely dry with a paper towel.

    In a small saucepan, sauté the onion and garlic in 2 tablespoons of olive oil until softened.

    Stir in the smoked paprika, cayenne, and tomato paste, cooking for 1 minute until fragrant.

    Add the crushed tomatoes and sugar; simmer for 10-15 minutes until the sauce thickens, then blend until smooth if desired.

    Heat the remaining olive oil in a large skillet over medium-high heat until it reaches 350°F (175°C).

    Fry the potato cubes in batches until they are golden brown and crispy on all sides, about 8-10 minutes.

    Drain the potatoes on paper towels and immediately season with salt while hot.

    Transfer potatoes to a serving dish, drizzle generously with the spicy tomato sauce and a dollop of aioli.
