- 2 lbs Ground Beef (80/20)
- 1 large Yellow Onion, diced
- 3 cloves Garlic, minced
- 3 tbsp Chili Powder
- 1 tsp Ground Cumin
- 28 oz Diced Tomatoes
- 2 tbsp Tomato Paste
- 1 cup Beef Broth
- 15 oz Kidney Beans, drained and rinsed
- 1 to taste Salt and Black Pepper
- 1/2 cup Shredded Cheddar Cheese(optional)
- 1/4 cup Sour Cream(optional)

In a large Dutch oven or heavy-bottomed pot, brown the ground beef over medium-high heat until no longer pink.

Drain the excess grease from the pot, leaving about one tablespoon for flavor.

Add the diced onions and cook for 5 minutes until translucent, then stir in the minced garlic for 1 minute.

Stir in the chili powder, cumin, and tomato paste, coating the meat and vegetables thoroughly.

Pour in the diced tomatoes (with juices), beef broth, and kidney beans, stirring to combine.

Bring the mixture to a boil, then reduce heat to low and cover the pot.

Simmer for at least 30 minutes, stirring occasionally to prevent sticking.
