Ingredients
- 500 g Chicken gizzards, cleaned and halved
- 3 large Ripe plantains, cubed
- 2 pieces Red bell peppers (Tatashe), blended
- 2 pieces Scotch bonnet peppers (Atarodo), blended
- 3 pieces Plum tomatoes, blended
- 1 large Red onion, chopped
- 2 cups Vegetable oil for frying
- 2 units Seasoning cubes
- 1 teaspoon each Curry powder and Thyme
- 1 piece Green bell pepper, diced for garnish
- 1 teaspoon Salt

Boil the cleaned gizzards with half the chopped onions, one seasoning cube, thyme, and salt until tender.

Deep fry the boiled gizzards until golden brown and set aside on paper towels.

In the same oil (or fresh oil), fry the cubed ripe plantains until they are golden and slightly caramelized, then set aside.

Reduce the oil in the pan to about 2 tablespoons and sauté the remaining onions until translucent.

Add the blended tomato and pepper mix to the pan and fry until the water evaporates and the oil begins to separate from the sauce.

Season the sauce with the remaining seasoning cube, curry powder, and salt to taste.

Add the fried gizzards and plantains into the sauce, stirring thoroughly to ensure every piece is well coated.

Add the diced green bell peppers, simmer for 2 minutes on low heat, and serve hot.
