Ingredients
- 1 loaf Italian sesame bread loaf (10-inch round)
- 1 cup Giardiniera (pickled vegetable salad), drained and chopped
- 1 cup Pitted green olives with pimentos, chopped
- 2 tablespoons Capers, drained
- 1/2 cup Extra virgin olive oil
- 1/4 pound Genoa salami, thinly sliced
- 1/4 pound Ham (preferably Chappe or Black Forest), thinly sliced
- 1/4 pound Mortadella, thinly sliced
- 1/4 pound Provolone cheese, sliced
- 1/4 pound Mozzarella cheese, sliced
- 1 tablespoon Red wine vinegar(optional)
- 1 teaspoon Dried oregano
Instructions
- 1
Prepare the olive salad by combining the chopped giardiniera, green olives, capers, olive oil, oregano, and vinegar in a bowl. Let it sit for at least 1 hour to marry the flavors.
- 2
Slice the round sesame bread loaf in half horizontally and pull out a small amount of the breading from the center of both halves to create a shallow well.
- 3
Spread half of the olive salad, including the oil, onto the bottom half of the bread, pressing it down firmly.
- 4
Layer the meats starting with the Genoa salami, followed by the ham, and then the mortadella.
- 5
Place the provolone and mozzarella cheese slices evenly over the meat layers.
- 6
Spread the remaining olive salad over the top half of the bread and place it on top of the cheese.
- 7
Wrap the entire sandwich tightly in plastic wrap and place a heavy skillet or weight on top for 30 minutes to compress the layers.
- 8
Slice into wedges and serve at room temperature to allow the oils to fully soak into the bread.
