Ingredients
- 4 large Potatoes, boiled and mashed
- 1 1/2 cups Besan (Gram flour)
- 1 tablespoon Green chili and ginger paste
- 1 teaspoon Mustard seeds
- 8 leaves Curry leaves
- 1/2 teaspoon Turmeric powder
- 8 pieces Pav (Soft dinner rolls)
- 4 tablespoons Dry Garlic Chutney
- 2 cups Vegetable oil for deep frying
- 2 tablespoons Fresh coriander, chopped
- 1 teaspoon Salt

Prepare the tempering by heating a little oil and adding mustard seeds, curry leaves, and turmeric until they crackle.

Mix the tempering, ginger-chili paste, salt, and chopped coriander into the mashed potatoes and form into 8 round balls.

Create a smooth, thick batter by mixing besan, a pinch of salt, turmeric, and water.

Heat the frying oil in a deep pan until hot.

Dip each potato ball into the besan batter, coating it evenly, and carefully drop into the hot oil.

Fry the vadas until they turn golden brown and crisp on the outside, then drain on paper towels.

Slit the pav buns horizontally without cutting all the way through.

Spread dry garlic chutney inside the pav, place a hot vada in the center, press down slightly, and serve with fried green chilies.
