Ingredients

Servings:4
  • 500 grams Paneer (Indian Cottage Cheese)
  • 1 cup Thick Greek Yogurt
  • 1 tablespoon Ginger-Garlic Paste
  • 1 tablespoon Kashmiri Red Chili Powder
  • 1 teaspoon Garam Masala
  • 1/2 teaspoon Dry Mango Powder (Amchur)
  • 2 tablespoons Roasted Gram Flour (Besan)
  • 2 tablespoons Mustard Oil
  • 2 cups Bell Peppers (Cubed)
  • 1 large Red Onion (Cubed)
  • 1 teaspoon Dried Fenugreek Leaves (Kasuri Methi)
  • 1 tablespoon Lemon Juice

Instructions

  1. 1

In a large mixing bowl, whisk the Greek yogurt until smooth, then add ginger-garlic paste, all spices, salt, and roasted gram flour.

  2. 2

Heat the mustard oil until it reaches smoking point, let it cool slightly, and whisk it into the marinade for an authentic smoky flavor.

  3. 3

Cut the paneer, onions, and bell peppers into 1.5-inch cubes and add them to the marinade.

  4. 4

Gently toss the ingredients to ensure everything is coated evenly, then cover and refrigerate for at least 30 minutes.

  5. 5

Thread the marinated paneer and vegetables onto skewers, alternating between the cheese and the veggies.

  6. 6

Preheat your grill or oven to 400°F (200°C) and lightly grease the grates or a baking tray.

  7. 7

Grill the skewers for 10-12 minutes, turning occasionally, until the paneer is golden brown and the edges are slightly charred.

  8. 8

Garnish with a sprinkle of chaat masala and a squeeze of fresh lemon juice before serving hot.
