Classic Greek Pork Gyro

Ingredients
- 2 lbs Pork shoulder, thinly sliced
- 1/4 cup Olive oil
- 2 tbsp Red wine vinegar
- 2 tsp Dried oregano
- 3 cloves Garlic, minced
- 4 pieces Greek pita bread
- 1 cup Tzatziki sauce
- 1 medium Red onion, thinly sliced
- 2 medium Tomato, sliced
- 1 cup French fries(optional)
- 1 tsp Salt and black pepper

Whisk together olive oil, vinegar, oregano, garlic, salt, and pepper in a large bowl.

Add the thinly sliced pork to the marinade, coating thoroughly, and let sit for at least 1 hour or overnight.

Preheat a large heavy skillet or griddle over high heat.

Sear the pork slices in batches until browned and slightly crispy on the edges, about 3-4 minutes per side.

Lightly brush the pita breads with oil and toast them in a pan until soft and warm.

Spread a generous tablespoon of tzatziki down the center of each warm pita.

Layer the cooked pork, onion slices, and tomato slices on top of the tzatziki.

Add a few french fries inside the pita if desired, then fold and wrap tightly in parchment paper to serve.
