Ingredients

Servings:2
  • 6 ounces high-quality semi-sweet chocolate (60% cacao)
  • 1/2 cup unsalted butter
  • 2 whole large eggs
  • 2 yolks large egg yolks
  • 1/4 cup granulated sugar
  • 1/8 teaspoon salt
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon pure vanilla extract
  • 1 tablespoon unsweetened cocoa powder
  • 1 tablespoon powdered sugar(optional)

Instructions

  1. 1

Preheat your oven to 425°F (218°C) and generously grease four 6-ounce ramekins with butter and a dusting of cocoa powder.

  2. 2

In a microwave-safe bowl or double boiler, melt the chopped chocolate and butter together until completely smooth.

  3. 3

In a medium mixing bowl, beat the whole eggs, egg yolks, granulated sugar, salt, and vanilla extract with a whisk until thick and pale yellow.

  4. 4

Gently fold the melted chocolate mixture into the egg mixture using a spatula until well combined.

  5. 5

Sift the flour over the batter and gently fold it in just until no white streaks remain; do not overmix.

  6. 6

Divide the batter evenly among the prepared ramekins and place them on a sturdy baking sheet.

  7. 7

Bake for 12 to 14 minutes until the sides are firm and set, but the center still jiggles slightly when moved.

  8. 8

Let the cakes cool for 1 minute, then run a thin knife around the edges and invert them onto serving plates immediately.
