Classic Beef Enchiladas
Corn tortillas rolled with seasoned ground beef and smothered in a spicy red chili sauce and melted cheese.

Ingredients
- 1 lb Ground beef
- 1/2 cup Onion, diced
- 8 pieces Corn tortillas
- 15 oz Red enchilada sauce
- 2 cups Shredded cheddar cheese
- 1 tsp Chili powder
- 1/2 tsp Cumin
- to taste Salt and pepper
- 1 tbsp Fresh cilantro(optional)
Instructions

Preheat oven to 375°F (190°C).

In a large skillet over medium heat, brown the ground beef and onions until the meat is fully cooked. Drain excess fat.

Stir in chili powder, cumin, salt, and pepper into the beef mixture.

Pour about 1/2 cup of the enchilada sauce into the bottom of a 9x13 inch baking dish.

Warm the tortillas in the microwave for 30 seconds to make them pliable.

Dip each tortilla into the remaining sauce, fill with a portion of the beef mixture and a sprinkle of cheese, then roll tightly.

Place the rolled tortillas seam-side down in the baking dish.

Pour the remaining sauce over the top and sprinkle with the remaining cheese.

Bake for 15-20 minutes until the cheese is melted and bubbling.

Garnish with fresh cilantro before serving.
