
Cilantro Lime Lomo Saltado

Ingredients
- 1 lb Sirloin steak, sliced into thin strips
- 1 large Red onion, sliced into wedges
- 2 medium Roma tomatoes, sliced into wedges
- 1 cup Fresh cilantro, roughly chopped
- 4 tablespoons Lime juice, freshly squeezed
- 3 tablespoons Soy sauce
- 1 tablespoon Aji Amarillo paste
- 3 cloves Garlic, minced
- 2 tablespoons Vegetable oil
- 2 cups Frozen french fries, cooked until crispy
- 1 pinch Salt and black pepper(optional)

Season the beef strips generously with salt and pepper.

Heat a large wok or skillet over high heat with one tablespoon of oil until smoking.

Sear the beef in small batches until browned and crispy on the edges, then remove from the pan and set aside.

Add the remaining oil to the pan and sauté the red onions for 2 minutes until slightly softened but still crunchy.

Stir in the minced garlic and Aji Amarillo paste, cooking for 30 seconds until fragrant.

Add the tomatoes, soy sauce, and lime juice, tossing quickly so the tomatoes don't break down completely.

Return the beef to the pan along with the cooked french fries and half of the chopped cilantro.

Toss everything together for 1 minute, then serve immediately topped with the remaining fresh cilantro.
