Chicken Fajita Quesadillas

Ingredients
- 1 pound Chicken breast, thinly sliced
- 4 pieces Large flour tortillas
- 2 cups Shredded Monterey Jack or Mexican blend cheese
- 2 cups Bell peppers (mixed colors), sliced
- 1 medium Yellow onion, sliced
- 2 tablespoons Fajita seasoning
- 2 tablespoons Olive oil
- 1/4 cup Fresh cilantro, chopped(optional)
- 1/2 cup Sour cream(optional)
- 1 tablespoon Lime juice
Instructions

Toss the sliced chicken with 1 tablespoon of fajita seasoning and lime juice.

Heat 1 tablespoon of oil in a large skillet over medium-high heat and cook chicken until browned and cooked through, then remove from pan.

Add remaining oil to the same skillet and sauté the peppers and onions with the rest of the seasoning until softened and slightly charred.

Return the chicken to the skillet with the vegetables and stir to combine, then set the mixture aside.

Clean the skillet and place a tortilla inside over medium heat, sprinkling a layer of cheese over half of the tortilla.

Top the cheese with a portion of the chicken and vegetable mixture, then fold the tortilla in half.

Cook for 2-3 minutes per side until the tortilla is golden brown and the cheese is fully melted.

Repeat for the remaining tortillas, slice into wedges, and serve with sour cream and cilantro.
