- 4 medium Potatoes, boiled and mashed
- 4 pieces Processed Cheese or Mozzarella cubes
- 1 1/2 cups Gram flour (Besan)
- 1 tablespoon Ginger-Garlic-Green Chili paste
- 1/2 teaspoon Turmeric powder
- 1 teaspoon Mustard seeds
- 8 leaves Curry leaves
- 4 pieces Burger Buns
- 1/4 cup Green Chutney and Tamarind Chutney
- 2 cups Vegetable Oil
- 1 teaspoon Salt

Heat a little oil and temper mustard seeds, curry leaves, and the ginger-garlic-chili paste.

Mix this tempering into the mashed potatoes with salt and turmeric to create the vada filling.

Divide the potato mixture into 4 large balls; flatten one, place a cheese cube in the center, and seal it back into a ball.

Prepare a thick, smooth batter by whisking gram flour, salt, a pinch of turmeric, and water.

Heat oil for deep frying in a heavy-bottomed pan.

Dip each cheese-stuffed potato ball into the gram flour batter until fully coated and carefully drop into the hot oil.

Fry until the vadas are golden brown and crispy on the outside.
