Ingredients

  • 20 oz Cheese tortellini
  • 2 cups Cherry tomatoes
  • 8 oz Fresh mozzarella pearls
  • 0.5 cup Fresh basil leaves
  • 0.25 cup Balsamic glaze
  • 2 tbsp Extra virgin olive oil
  • to taste Salt and black pepper(optional)

Instructions

    Cook the cheese tortellini in a large pot of salted boiling water according to package instructions. Drain and rinse with cold water to stop the cooking process.

    In a large mixing bowl, combine the cooled tortellini, halved cherry tomatoes, and mozzarella pearls.

    Drizzle with olive oil and toss gently to coat.

    Thinly slice the fresh basil (chiffonade) and fold it into the salad.
