Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
In a large bowl, toss the sliced peaches with the brown sugar, bourbon, and nutmeg until well coated.
Transfer the peach mixture into the prepared baking dish and spread evenly.
In a separate medium bowl, whisk together the flour, granulated sugar, baking powder, salt, and Cajun spice blend.
Stir the milk, melted butter, and vanilla extract into the dry ingredients until a thick batter forms.
Drop spoonfuls of the batter over the peach mixture, leaving small gaps for steam to escape.
Bake for 40 to 45 minutes until the topping is golden brown and the peach juices are bubbling.
Remove from the oven and let cool for at least 15 minutes to allow the syrup to thicken before serving.
