Ingredients
- 3 tablespoons Vegetable oil
- 1 large Onion, finely chopped
- 1 medium Green bell pepper, diced
- 2 cloves Garlic cloves, minced
- 1 tablespoon Ginger, grated
- 2 tablespoons Mild or medium curry powder
- 3 large Carrots, coarsely grated
- 2 cups Green cabbage, finely shredded
- 1 can (410g) Baked beans in tomato sauce
- 1 whole Bird's eye chili, chopped(optional)
- 1 teaspoon Salt and black pepper
- 2 tablespoons Fresh coriander for garnish(optional)
Instructions

Heat the vegetable oil in a large pan or pot over medium heat.

Add the onions and green bell pepper, sautéing for about 5 minutes until softened and translucent.

Stir in the minced garlic, ginger, and chopped chili, cooking for another 2 minutes until fragrant.

Add the curry powder and stir constantly for 1 minute to toast the spices without burning them.

Add the grated carrots and shredded cabbage to the pan, stirring well to coat the vegetables in the spice mixture.

Cook the vegetables for 10-12 minutes, stirring occasionally, until they are tender but still retain a slight crunch.

Fold in the canned baked beans (including the sauce) and season with salt and pepper.

Simmer for an additional 5 minutes to allow the flavors to meld, then serve warm or cold.
