Bruschetta al Pomodoro

Ingredients

  • 4 large Roma tomatoes
  • 1/4 cup Fresh basil leaves
  • 3 tablespoons Extra virgin olive oil
  • 2 cloves Garlic cloves
  • 1 teaspoon Balsamic glaze(optional)
  • 8 slices Sourdough or baguette slices
  • 1 pinch Salt and black pepper

Instructions

    Dice the tomatoes finely and place them in a bowl, discarding excess juice/seeds if necessary.

    Chop the fresh basil and add it to the tomatoes along with 2 tablespoons of olive oil, salt, and pepper. Let sit for 10 minutes to marinate.

    Toast the bread slices under a broiler or on a grill until golden brown and crisp.

    Peel one garlic clove and rub the cut side directly onto the surface of the warm toasted bread.

    Spoon the tomato mixture generously onto each slice of bread.

    Drizzle with the remaining olive oil and optional balsamic glaze before serving immediately.
