Ingredients

  • 8 units Large eggs
  • 4 units Pão Francês (Brazilian French Rolls)
  • 3 tablespoons Salted butter
  • 0.25 cup Whole milk
  • 100 grams Queijo Minas or Mozzarella cheese
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 unit Papaya (sliced)(optional)
  • 4 tablespoons Brazilian coffee beans (ground)
  • 8 slices Mortadella or Ham slices(optional)

Instructions

  1. 1

Slice the Pão Francês rolls in half and spread a generous layer of butter on the cut sides.

  2. 2

Heat a large skillet over medium heat and toast the rolls butter-side down until golden brown and crisp.

  3. 3

In a medium bowl, whisk the eggs with the milk, salt, and black pepper until well combined.

  4. 4

Melt the remaining butter in a non-stick pan over medium-low heat.

  5. 5

Pour the egg mixture into the pan and let it sit for 30 seconds before gently folding with a spatula.

  6. 6

When the eggs are nearly set but still slightly moist, fold in the cheese cubes or slices until melted.

  7. 7

Prepare a fresh pot of strong Brazilian coffee using a cloth filter or drip machine.

  8. 8

Serve the warm scrambled eggs alongside the toasted bread, cold cuts, and fresh papaya slices.
