Bourbon Peach BBQ Pork Chops

- 4 pieces Thick-cut bone-in pork chops
- 2 cups Fresh peaches, pitted and diced
- 1/2 cup Kentucky Bourbon
- 1/4 cup Dark brown sugar
- 2 tablespoons Apple cider vinegar
- 1 tablespoon Dijon mustard
- 3 cloves Garlic, minced
- 1 teaspoon Smoked paprika
- 1/4 teaspoon Cayenne pepper(optional)
- 2 tablespoons Butter
- 1 to taste Salt and black pepper

In a medium saucepan, melt the butter over medium heat and sauté the garlic until fragrant, about 1 minute.

Add the diced peaches, bourbon, brown sugar, apple cider vinegar, mustard, and smoked paprika to the pan.

Simmer the sauce for 15-20 minutes, mashing the peaches occasionally, until thickened and syrupy; blend for a smooth texture if desired.

Pat the pork chops dry with paper towels and season both sides generously with salt and black pepper.

Preheat a cast-iron skillet or grill to medium-high heat and sear the chops for 4-5 minutes on one side to develop a crust.

Flip the pork chops and generously brush the seared side with the bourbon peach BBQ sauce.

Continue cooking for another 5-6 minutes, basting frequently, until the internal temperature reaches 145°F (63°C).

Remove the chops from the heat and let them rest for 5 minutes before serving with extra sauce on the side.
