Ingredients
- 1 1/2 cups Yellow Cornmeal
- 1/2 cup All-purpose Flour
- 1 cup Buttermilk
- 1 large Egg, beaten
- 2 tablespoons Smoked Paprika
- 1 teaspoon Cayenne Pepper
- 1 teaspoon Dried Thyme
- 1 tablespoon Garlic Powder
- 1 tablespoon Onion Powder
- 1 teaspoon Baking Powder
- 2 tablespoons Finely Minced Jalapeño(optional)
- 1 quart Vegetable Oil for frying

In a small bowl, whisk together the smoked paprika, cayenne, thyme, garlic powder, and onion powder to create the blackening spice blend.

In a large mixing bowl, combine the cornmeal, flour, baking powder, and half of the blackening spice blend.

Whisk the egg and buttermilk together in a separate container, then fold into the dry ingredients until a thick batter forms.

Stir in the minced jalapeños if using, and let the batter rest for 10 minutes to allow the cornmeal to hydrate.

Heat the vegetable oil in a heavy-bottomed pot or deep fryer to exactly 365 degrees Fahrenheit.

Using a small cookie scoop, drop rounded tablespoons of batter into the remaining blackening spice blend, rolling gently to coat the exterior.

Carefully drop the spiced batter balls into the hot oil, frying in small batches for 3-4 minutes until the crust is dark and the center is cooked through.

Drain the puppies on a wire rack or paper towels and serve immediately with a side of cool ranch or BBQ sauce.
