In a small skillet, sauté the minced andouille sausage over medium heat until browned and slightly crispy, then set aside to cool.
Whisk together the flour, baking powder, and a pinch of Cajun seasoning in a large bowl.
In a separate bowl, beat the eggs, buttermilk, and melted butter together, then fold into the dry ingredients until just combined.
Stir the cooled andouille sausage and green onions into the waffle batter; let the batter rest for 10 minutes while the waffle iron heats.
Coat the chicken strips generously on all sides with the blackening seasoning, pressing it into the meat.
Heat vegetable oil in a heavy cast-iron skillet over high heat until smoking, then sear chicken for 3-4 minutes per side until charred and cooked through.
Cook the waffles in the preheated waffle iron according to the manufacturer's instructions until golden and crisp.
Serve the blackened chicken strips on top of the hot andouille waffles and drizzle with maple syrup or hot honey.
