Ingredients
- 2 lbs Chicken wings (flats and drumettes)
- 2 tablespoons Smoked paprika
- 1 tablespoon Dried thyme
- 1 tablespoon Dried oregano
- 1 teaspoon Cayenne pepper
- 1 tablespoon Garlic powder
- 1 tablespoon Onion powder
- 1 1/2 teaspoons Kosher salt
- 4 tablespoons Unsalted butter, melted
- 1/2 cup Smoky BBQ sauce
- 2 tablespoons Vegetable oil
Instructions
- 1
Pat the chicken wings completely dry with paper towels to ensure the spices adhere and create a proper crust.
- 2
In a small bowl, whisk together the smoked paprika, thyme, oregano, cayenne, garlic powder, onion powder, and salt.
- 3
Place the wings in a large bowl, pour the melted butter over them, and toss until evenly coated.
- 4
Dredge each wing in the spice mixture, pressing firmly so a thick layer of seasoning coats the entire surface of the meat.
- 5
Heat the vegetable oil in a large cast-iron skillet over medium-high heat until it begins to shimmer and slightly smoke.
- 6
Sear the wings in batches for 4-5 minutes per side until the spices form a dark, charred crust and the chicken is cooked through.
- 7
Lower the heat to medium-low and brush each wing generously with the smoky BBQ sauce while still in the pan.
- 8
Allow the sauce to bubble and caramelize onto the blackened crust for 1-2 minutes before removing from heat to serve.
