Ingredients

Servings:4
  • 1 cup All-purpose flour
  • 1/2 cup Cornstarch
  • 1 teaspoon Baking powder
  • 12 ounces Ice-cold light lager beer
  • 1 large Egg yolk
  • 1/2 teaspoon Garlic powder
  • 1 teaspoon Kosher salt
  • 1/4 teaspoon Black pepper
  • 1 quart Vegetable oil for frying
  • 1/4 cup Extra flour for dredging(optional)

Instructions

  1. 1

Place the flour, cornstarch, baking powder, salt, garlic powder, and pepper in a large mixing bowl and whisk to combine.

  2. 2

Place the bowl of dry ingredients in the freezer for 10 minutes to ensure everything is chilled.

  3. 3

In a separate small bowl, lightly beat the egg yolk.

  4. 4

Gently pour the ice-cold beer into the egg yolk and stir once; do not over-mix to preserve carbonation.

  5. 5

Slowly pour the wet mixture into the chilled dry ingredients.

  6. 6

Use chopsticks to whisk the batter briefly; it is crucial to leave some lumps in the batter for maximum crunch.

  7. 7

Dredge your vegetables or seafood in a light coating of dry flour before dipping into the beer batter.

  8. 8

Immediately drop the battered items into 375°F (190°C) oil and fry until golden brown and crispy.
