Ingredients

Servings:4
  • 1 1/2 lbs Flank steak or Sirloin, thinly sliced
  • 1/4 cup Olive oil
  • 2 tbsp Lemon juice
  • 4 cloves Garlic, minced
  • 2 tbsp Shawarma spice blend (cumin, coriander, turmeric, cinnamon)
  • 4 pieces Large pita breads
  • 1/2 cup Tahini sauce
  • 1 medium Red onion, thinly sliced
  • 2 whole Roma tomatoes, diced
  • 1/4 cup Fresh parsley, chopped
  • 1/2 cup Pickled cucumbers or turnips(optional)

Instructions

  1. 1

In a large bowl, whisk together olive oil, lemon juice, minced garlic, and the shawarma spice blend.

  2. 2

Add the thinly sliced beef to the marinade, tossing well to coat; let it marinate for at least 30 minutes, or up to 4 hours in the fridge.

  3. 3

Heat a large cast-iron skillet or heavy pan over high heat until very hot.

  4. 4

Add the beef in a single layer (work in batches if necessary) and sear for 3-4 minutes until browned and slightly crispy on the edges.

  5. 5

Remove the beef from the heat and let it rest for 2 minutes while you warm the pita breads.

  6. 6

Spread a generous tablespoon of tahini sauce in the center of each warm pita.

  7. 7

Layer the cooked beef, sliced onions, diced tomatoes, and pickles onto the pita.

  8. 8

Sprinkle with fresh parsley, roll the pita tightly, and serve immediately.
