Ingredients
- 2 lbs Chicken thighs and drumsticks
- 4 large Yellow onions, thinly sliced
- 1/2 cup Fresh lemon juice
- 3 tbsp Dijon mustard
- 1/4 cup Peanut oil
- 4 cloves Garlic cloves, minced
- 1 piece Scotch Bonnet or Habanero pepper (whole)
- 1 cube Bouillon cube (chicken flavor)
- 1 tsp Black pepper
- 2 pieces Bay leaves
- 1/2 cup Water

In a large bowl, combine the chicken, sliced onions, lemon juice, mustard, minced garlic, and black pepper; marinate for at least 3 hours or overnight.

Remove the chicken from the marinade, scraping off any excess onions, and pat the chicken dry.

Heat peanut oil in a large pot over medium-high heat and brown the chicken pieces on all sides until golden, then remove and set aside.

In the same pot, add the onions from the marinade and sauté for 10-15 minutes until they become soft and slightly caramelized.

Return the chicken to the pot and add the remaining marinade liquid, the bouillon cube, bay leaves, and water.

Place the whole chili pepper on top (do not break it if you want less heat), cover the pot, and simmer on low heat for 30 minutes.

Remove the lid and continue to simmer for 10 minutes to allow the sauce to thicken and the onions to become jam-like.

Discard the bay leaves and chili pepper before serving hot over white jasmine rice.
