Ingredients
- 2 1/2 cups All-purpose flour
- 1/2 cup Granulated sugar
- 2 1/4 teaspoons Active dry yeast
- 1 1/4 cups Warm water
- 1/2 teaspoon Salt
- 1/2 teaspoon Ground nutmeg
- 3 cups Vegetable oil for deep frying
- 1 teaspoon Vanilla extract(optional)

In a small bowl, dissolve the sugar and yeast in warm water and let it sit for 5-10 minutes until it becomes frothy.

In a large mixing bowl, sift together the flour, salt, and nutmeg to ensure there are no lumps.

Pour the yeast mixture into the dry ingredients and mix thoroughly with a wooden spoon or your hand until the batter is smooth.

Cover the bowl with a clean kitchen towel or plastic wrap and place it in a warm, draft-free area for 45 to 60 minutes until the dough doubles in size.

Heat the vegetable oil in a deep pot over medium heat until it reaches approximately 350°F (175°C).

Degas the batter slightly by stirring, then use your hand or a scoop to drop small, round balls of dough into the hot oil.

Fry the balls, turning them constantly with a slotted spoon to ensure they brown evenly into a golden-brown color.

Remove the puff puffs from the oil and place them on paper towels to drain excess oil before serving warm.
