- 4 large Ripe plantains (yellow with black spots)
- 2 tablespoons Fresh ginger root, peeled and grated
- 1/2 small Onion, finely minced
- 1 teaspoon Cayenne pepper or chili powder
- 1 teaspoon Salt
- 1/4 teaspoon Ground cloves
- 1/4 teaspoon Nutmeg(optional)
- 1 tablespoon Water
- 2 cups Vegetable oil for deep frying
- 1/4 cup Roasted peanuts for garnish(optional)

Peel the plantains and cut them into small 1/2-inch cubes or diagonal slices.

In a blender or using a mortar and pestle, grind the ginger, onion, salt, cayenne pepper, cloves, and nutmeg with a splash of water to form a smooth paste.

Place the plantain cubes in a large mixing bowl and pour the spice paste over them.

Toss the plantains thoroughly to ensure every piece is evenly coated, then let them marinate for at least 15 to 20 minutes.

Heat the vegetable oil in a deep frying pan or wok over medium-high heat until it reaches approximately 350°F (175°C).

Carefully drop the plantains into the hot oil in batches, being careful not to overcrowd the pan.

Fry for 5 to 8 minutes, turning occasionally, until the plantains are dark golden brown and the edges are slightly caramelized.

Remove with a slotted spoon and drain on paper towels; serve hot, traditionally with roasted peanuts.
