Ingredients
- 2 6-ounce portions Salmon fillets
- 0.25 cup Soy sauce
- 0.25 cup Mirin
- 0.25 cup Sake
- 1 tablespoon Granulated sugar
- 1 teaspoon Grated fresh ginger
- 1 tablespoon Vegetable oil
- 1 pinch Salt
- 1 teaspoon Toasted sesame seeds(optional)
- 1 tablespoon Sliced green onions(optional)

Pat the salmon fillets completely dry with paper towels and season lightly with a pinch of salt.

In a small bowl, whisk together the soy sauce, mirin, sake, sugar, and grated ginger until the sugar dissolves.

Heat the vegetable oil in a non-stick skillet over medium-high heat until shimmering.

Place the salmon skin-side down (if applicable) and sear for 3-4 minutes until the skin is crispy.

Carefully flip the salmon and cook for another 2 minutes, then pour the sauce mixture into the pan.

Let the sauce bubble and reduce for 1-2 minutes while spooning it continuously over the fish to glaze.
