- 1 cup Shiro Powder (spiced chickpea flour)
- 2 large Red Onions, finely minced
- 1/2 cup Niter Kibbeh (spiced clarified butter) or Oil
- 2 tablespoons Berbere Spice Blend
- 1 tablespoon Garlic, minced
- 1 teaspoon Ginger, minced
- 3 cups Water
- 1 tablespoon Tomato Paste(optional)
- 1 teaspoon Salt
- 1 whole Green Chili (Jalapeño), sliced(optional)

Place the minced onions in a dry pot over medium heat and cook until they lose moisture and turn translucent, about 10 minutes.

Add the Niter Kibbeh (or oil) and Berbere spice to the onions, stirring constantly to create a fragrant base.

Stir in the garlic and ginger, cooking for another 2 minutes until aromatic.

Slowly pour in 2 cups of water and the tomato paste, bringing the mixture to a gentle simmer.

Gradually whisk in the Shiro powder, ensuring no lumps form; use a traditional wooden stirrer if available.

Add the remaining cup of water if the consistency is too thick; the stew should be smooth and pourable but dense.

Simmer on low heat for 15-20 minutes, stirring occasionally to prevent the bottom from burning.
