Ingredients

Servings:4
  • 1 cup Shiro Powder (spiced chickpea flour)
  • 2 large Red Onions, finely minced
  • 1/2 cup Niter Kibbeh (spiced clarified butter) or Oil
  • 2 tablespoons Berbere Spice Blend
  • 1 tablespoon Garlic, minced
  • 1 teaspoon Ginger, minced
  • 3 cups Water
  • 1 tablespoon Tomato Paste(optional)
  • 1 teaspoon Salt
  • 1 whole Green Chili (Jalapeño), sliced(optional)

Instructions

  1. 1

Place the minced onions in a dry pot over medium heat and cook until they lose moisture and turn translucent, about 10 minutes.

  2. 2

Add the Niter Kibbeh (or oil) and Berbere spice to the onions, stirring constantly to create a fragrant base.

  3. 3

Stir in the garlic and ginger, cooking for another 2 minutes until aromatic.

  4. 4

Slowly pour in 2 cups of water and the tomato paste, bringing the mixture to a gentle simmer.

  5. 5

Gradually whisk in the Shiro powder, ensuring no lumps form; use a traditional wooden stirrer if available.

  6. 6

Add the remaining cup of water if the consistency is too thick; the stew should be smooth and pourable but dense.

  7. 7

Simmer on low heat for 15-20 minutes, stirring occasionally to prevent the bottom from burning.

  8. 8

Finish by stirring in the green chili and salt to taste, then serve hot with Injera.
